I have decided that I am going to start constructing my meals around my harvest. I know...duh right? I seem to use my harvest as an enhancement instead of a driving force and I would rather use groceries as the enhancement and my harvest as the driving force and so...so that I will remember...I will be posting recipes or uses I have found for my veggies.
I don't know if I will be as gun-ho as to can/jar my harvest but I do plan on freezing herbs this year. I am growing them...I might as well enjoy them for as long as I can right?
Tonight...I decided to use my flat leaf parsley and cucumbers in tacos. Sounds strange right? I always love to add diced cucumbers into a meat dish...it seems to add a nice sense of fresh. The parsley? It is to be good for digestion and I am growing it so, I might as well use it right? I also traded out iceberg lettuce for baby spinach, mainly because I didn't have any, but spinach is also better for the system. I think I may change my mind as to not growing baby spinach. I always think it is too much trouble so perhaps I will grow it in a deck box.
This is ground turkey meat with taco seasoning, red pepper flakes, garlic, and taco sauce. After having read the ingredients for the taco seasons...I think I may make my own in the dead of winter when I long for my garden. The modified food starch business must go...if you can't tell me what it is...why is it in there???
That being said...I do enjoy the seasoning, I am just wanting more control over what I injest.

Chopped flat leaf Italian parsley, diced cucumbers, chopped baby spinach, and four cheese shredded blend, with the seasoned turkey in the middle.
Assembled tacos. I enjoyed the different flavors that I put in there. Next time...perhaps I will add avocado!
